February 9th & Sweet Potato Salad

February 9 is the 40th day of the year in the Gregorian calendar. There are 325 days remaining until the end of the year. That’s good to know.

1870, February 9, the U.S. Weather Bureau was established. “The National Weather Service (NWS), once known as the Weather Bureau, is one of the six scientific agencies that make up the National Oceanic and Atmospheric Administration (NOAA) of the United States government.” Thanks, Wikipedia. Considering the snowier, colder than normal winter we have had, I am grateful to the NWS for the forecast heads-up. Their predictions along with my in-house weather man, DH, keeps me ahead of the crowds at the grocery stores & gasoline stations – filling the larder & the gas tank. Yes, a Prius does have to be filled with gasoline on occasion.

DH has thermometers set up inside & outside the house. It is important to know the temperature in the garage, since that is where Moxie Kitty stays in winter, as do my dwarf citrus trees. Why we need to know the temperature of the deck outside, under the deck & the driveway, I have no idea. But there is no disputing DH’s accuracy. Our friends from across the country call to ask his weather report for their travel plans to all points on the compass. He’s good.

Raw Sweet Potato Salad

How about a delicious raw salad, chocked full of fiber & vitamins A & C, delicious anytime, but exactly what the doctor ordered for a cold winter’s day.


  • 2 cups raw Sweet Potato, peeled & finely shredded, rinsed & drained
  • 4 Dates, finely chopped
  • 2 Apple medium; finely chopped
  • 1 Orange, separated into segments
  • 2 Tablespoons Walnuts or Pecans coarsely chopped
  • 1 sprinkle Nutmeg
  • 1 teaspoon Orange Zest
  • 1/4 cup (preferably fresh) Orange Juice
  • 1 Tablespoon (preferably fresh) Lemon Juice

This is so good it really doesn’t need dressing, but just in case:


  • 3 Tablespoons Olive Oil
  • 2 Tablespoons Almond Oil
  • 3 Tablespoons (preferably fresh) Lemon Juice
  • 1 small Garlic Clove, crushed
  • 4 Tablespoons plain Yogurt
  • 1 teaspoon dried Parsley
  • Sea Salt & fresh ground Pepper to taste


    1. In a medium bowl, toss the sweet potatoes, dates, apples & orange sections together; add nuts, nutmeg & orange zest; toss.
    2. Sprinkle with juices to prevent discoloration.
    3. Make the dressing by placing all the ingredients in a jar with a tight-fitting lid; shake vigorously to blend.
    4. Just before serving the salad, pour the dressing over the salad; toss well together.
