Fridays & 9 Layer Dip

The first time I patronized TGI Friday’s was the last day of school before Christmas break in 9th grade. Friday’s was brand new in Memphis & the older brother of the high school quarterback was working there. Nine giggling girls reveled in the fact that we had thought ahead, obtaining permission to skip the afternoon classes before we were released for our welcomed holiday vacation. A couple of Moms drove us to Overton Square, the hot gathering spot for college kids, where we ate, browsed the shops & believed we were the best-looking cheerleading squad in Memphis strolling The Square in our uniforms.

TGI Friday’s 9 Layer Dip

Obviously not my recipe, someone sent to me this (supposedly) exact recipe for the 9 Layer Dip you can enjoy at TGI Friday’s. Now you can enjoy it at home.

Ingredients:

  • 2 strips Bacon, diced
  • 16 ounce can Refried Beans (plain)
  • 1/2 cup Sour Cream
  • 1/2 teaspoon Taco Seasoning
  • 3/4 cup shredded Cheddar Cheese
  • 3/4 cup Guacamole
  • 1/3 cup diced Tomatoes
  • 1 tablespoon fresh Cilantro, finely chopped
  • 2 tablespoon sliced Black Olives
  • 2 tablespoon finely sliced Green Onions

Instructions:

  1. Fry diced bacon until crisp.
  2. Add refried beans & cook, slowly stirring frequently until the bacon & bacon drippings are mixed through, about 15 minutes; Remove from heat.
  3. Mix taco seasoning with sour cream & set aside.

To build 9 Layer Dip place ingredients in this order on a shallow serving platter:

Spread refried beans to about 1 inch thick.

Then layer 1/2 cup of the shredded cheese, cup sour cream, guacamole, diced tomatoes, diced cilantro, black olives, & sliced green onion.

Add 1/4 cup cheese over top for garnish.
