Spring Forward & Vinaigrette

Woo Hoo! Daylight Savings Time starts tonight! More hours of daylight coming soon!
I crave sunlight during the winter months, so when we spring forward I get excited. It is almost time to load up on vitamin D through the Lord’s natural source – the Sun up in the sky!


The Germans during World War 1 were the first to use Daylight Savings Time (in modern times) to save coal. Britain soon followed with Russia following in 1917 & the United States the next year. A couple of years ago the U.S. extended DST by 2 weeks in the spring & in the fall, springing forward in the middle of March, falling back the end of November. Good decision, guys!


Apple Cider Vinaigrette

It’s springtime, so here’s a wonderful basic dressing to drizzle on a salad of baby greens & spinach.


  • 2 Tablespoons Sesame Seeds
  • 1/2 cup Cider Vinegar
  • 1/3 cup Honey
  • 1/3 cup Olive Oil
  • 3 Tablespoons Flaxseed Oil
  • 2 teaspoons minced Onion
  • 1/4 teaspoon Paprika
  • 1 Tablespoon Poppy Seeds (optional)
  • Sea Salt & Pepper to taste


  1. Toast sesame seeds.
  2. In large bowl combine vinegar & honey, stirring to combined.
  3. Add remaining ingredients, whisking until well mixed.

Store in refrigerator up to 1 week.

Throw everything in a blender for a creamy vinaigrette.
