April 30th & Hot Bacon Asparagus Salad

April 30th – the 120th day of the year, only 245 days remaining in 2011!
April is gone, May is coming.
The last day of April – already! My goodness wasn’t it just Christmas? I feel as though my days are set on fast forward.
Starting in May, I will Post Monday through Friday, using Saturday as a day for folks to catch up on what they missed during the week.
Something to look forward to in May is a give-away contest for my 100th Post. Details to come.

Congratulations to my sweet friend B, pictured @ #3 son’s wedding last summer, who is marrying today on the SC coast!

I’m off now to the wedding of dear choir friends – the Lord gave a special gift to these two: each other. Congrats B & SA!

Hot Bacon Asparagus Salad

Always use excellent bacon without nitrates/nitrites or preservatives.


  • 7 Bacon strips, diced
  • 1 pound Asparagus, trimmed, cut into 1 ½ inch pieces
  • 1/3 cup Cider Vinegar
  • 1 Tablespoon Honey
  • 1/2 teaspoon ground Mustard
  • 1/4 teaspoon White Pepper
  • 4 cups torn Salad Greens
  • 1/2 cup sliced Almonds
  • 2 sliced Boiled Eggs


  1. In skillet, cook bacon until crisp; remove with a slotted spoon to paper towel.
  2. Drain, reserving 2 -3 Tb drippings.
  3. Sauté asparagus in drippings until crisp-tender.
  4. Add vinegar, sugar, mustard, pepper, bacon.
  5. Cook, stirring for 1 – 2 minutes.
  6. In a large bowl, combine salad greens & almonds.
  7. Add the asparagus mixture; toss gently.
  8. Top with eggs.

Serve immediately.

    I know you meant “use bacon without nitrites” but others may not know.

    Without, yes, WITHOUT nitrates or nitrites!
