Feeding Fish & Mini Tuna Griddlecakes

Every day before DH leaves for work he checks his goldfish & pond. Lucy & Moxie come running when he heads outside with the fish food in hand because after generously providing for his golden beauties, he shares with the pets.

Moxie jumps on the concrete bench at the head of the driveway, purring, stretching, acting cute, then settles down nicely to eat her two pieces of floating fish food. Lucy sits quietly until DH turns her way, then stands on her back feet walking backwards until her nibbles are placed on the driveway. When Lu’s best friend, Millie, stays with us, she is out there awaiting her fishy snack, too.

I wonder sometimes if my furry pets will someday grow gills…

Mini Tuna Griddlecakes


  • Coconut Oil for frying
  • 12 oz canned Tuna, drained
  • 1 Egg
  • 1 Scallion, diced (the whole onion)
  • 1/4 cup Mayonnaise
  • 1/2 cup Bread Crumbs
  • Juice of 1/2 Lemon
  • Lemon Wedges


  1. Heat 1/4-inch of oil in a large iron skillet over medium heat.
  2. Combine tuna, beaten egg, green onions, mayonnaise, 1/4 cup bread crumbs & lemon juice.
  3. Form into 8 patties; Dust with additional bread crumbs.
  4. When oil is hot, fry patties until golden brown, about 2 minutes on each side.
  5. Remove from oil & drain on paper towels before serving.
  6. Serve with lemon wedge on plate.
