Kitty Dreams & Chicken Pasta Salad

Lucy has puppy dreams all the time, especially when she has had a busy day chasing chipmunks, cottontails & the like. Moxie is usually a quiet, sound sleeper, meowing when disturbed. But at this moment Moxie is having kitty dreams – don’t know what she is chasing, but whew – glad it’s not me!

Chicken Pasta Salad

This takes 2 days to make, so start now! :0)

Ingredients:

  • 1 pound Rainbow Fettuccine, cooked according to package directions
  • 1 cup Basic Vinaigrette, recipe below…
  • 6 cups grilled Chicken, chopped (better flavor than baked!)
  • 2 cups Artichoke Hearts, cut up (you can cheat & use 2 cans)
  • 4 ounces sliced Black Olives, drained
  • 1 cup Mayonnaise, preferably homemade!
  • 1 cup plain Yogurt
  • 1/2 cup chopped fresh Parsley
  • 1/4 cup chopped Green Onions, use the green & white parts
  • 1/2 cup chopped fresh Basil
  • 8 ounces canned Button Mushrooms, drained
  • Garlic Salt & Lemon Pepper to taste

Instructions:

  1. Cook pasta; Marinate in dressing overnight.
  2. Mix remaining ingredients with pasta.
  3. Refrigerate for several hours to blend flavors.

Basic Vinaigrette

Ingredients:

  • 1/2 cup Red Wine Vinegar
  • 2 teaspoons Dijon Mustard
  • 2 Garlic Cloves, mashed
  • 1/4 teaspoon of Sea Salt
  • 1/4 cup Olive Oil
  • 1/2 cup Sesame or Almond Oil

Instructions:

  1. Place red wine vinegar, Dijon mustard, garlic & salt in a glass jar with a tight fitting lid; Shake to combine.
  2. Add oils; Shake vigorously, until dressing emulsifies & thickens to the consistency of cream.
  3. (Okay, lazy bones, you can use a immersion blender, but it will be garlicky, or an electric handmixer!)

  4. Let dressing sit for 1 hour at room temperature before straining out garlic to serve.
  5. Dressing can be refrigerated, but should be brought to room temperature & shaken again before serving.

    Made this and it is great. It will be added to my list of regulars. I have made pasta salad for years and this was very similar to mine. However, putting dressing on noodles only and letting it sit was new for me. I think this really added to the flavor. Often pasta salads are greasy (to Me) this was not so with this way. Thanks
