Rainbow Omelet

As a family we challenge each other every day – how many colors did you eat?

Ingredients:

  • Olive Oil or Coconut Oil
  • Roma Tomato, diced
  • Carrot, diced
  • Yellow String Beans, diced
  • Spinach, chopped
  • Red (Purple) Onion, diced
  • 2 Eggs, lightly beaten
  • Salt & Pepper to taste

Instructions:

  1. Sauté veggies in oil.
  2. In omelet pan heat oil; add eggs.
  3. Cook until center almost set.
  4. Add sautéed veggies.
  5. Cook until center of eggs set.
  6. Fold omelet over, season with salt & pepper.
  7. Serve.

Note: cheese can be added if desired.

  • Dried Plums – cracks me up that people will eat “dried plums” but not prunes – sheesh!
