Moses In A Cradle & Big Mama’s Coca-Cola Cake

The edging of my Mother’s flowerbed is unusual. Instead of the standard green with maybe a colorful flower or two, Mother’s is purple! Against the green of her huge azalea, it definitely stands out.

Moses In A Cradle is the name for this waxy purple plant that accentuates the flowerbed alongside her driveway. The little pink flower in the center, “Moses” is just icing on the cake.

When folks come to visit, no one leaves without Mother asking if they would like to take part of the plant. “Just break off a stem & stick it in the ground. It will grow,” she tells them.

Coca-Cola Cake

This is DH’s grandmother’s recipe that he loved when growing up. I have never made this & was taken aback when I saw “oleo” listed as an ingredient. I haven’t seen that in years… ugh! I would substitute 1 cup of grass-fed, unsalted butter, if I were baking this. Are there marshmallows available without high fructose corn syrup? Oh well, we’ve stopped eating sugar-laden sweets anyway.


  • 2 cups Sugar
  • 2 cups All-purpose Flour
  • 2 sticks Oleo
  • 3 Tablespoons Cocoa
  • 1 cup Coca-Cola
  • 1/2 cup Buttermilk
  • 1 teaspoon Baking Soda
  • 2 Eggs
  • 1 1/2 cup Miniature Marshmallows


  1. Set aside sugar and flour in mixing bowl.
  2. Mix and bring to a boil oleo, cocoa, and Coca-Cola.
  3. Stir boiling mixture into sugar and flour.
  4. Add 1/2 cup butter milk with soda, eggs, and marshmallows.
  5. Bake in a long pan at 300 or 350 degrees for 45 minutes or until done.


  • 1 stick Oleo
  • 3 Tablespoons of Cocoa
  • 6 Tablespoons Coca-Cola
  1. Mix and bring to boil.
  2. Add this mixture to :  1 Box Confections Sugar and 1 cup pecans.
  3. Spread over cake while still warm.
