Baseball & Caramel Popcorn with Nuts

Tonight my choir, the Chancel Choir of Covenant Presbyterian Church, is singing the National Anthem before the start of a baseball game, our local Triple-A team.

We are to wear blue jeans & either a red or white top. Didn’t mention what kind of shoes… Hey, I could wear my Vibram Five-Fingers! They always create a stir!


But probably I’ll just play it safe & wear my red Tom’s.

Caramel Popcorn with Nuts

Homemade Cracker Jacks, of course, but you have to add your own prize! Play Ball!


  • 1 cup Natural Sugar, like Rapadura or Sucanat
  • 1/2 cup Unsalted Butter
  • 1/2 cup Maple Syrup or local Honey
  • 1/2 teaspoon Sea Salt
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Baking Soda
  • 16 cups Popped (non-GMO!) Corn
  • 1 cup Mixed Nuts


  1. Preheat oven to 250 degrees.
  2. Stir together first five ingredients in a saucepan.
  3. Bring to a boil over medium heat, stirring constantly.
  4. Remove mixture from heat & stir in baking soda.
  5. Place popped corn in 2 lightly buttered shallow roasting pans.
  6. Evenly divide nuts between the pans of popcorn.
  7. Pour sugar mixture evenly over popcorn & nuts.
  8. Stir well with spatula.
  9. Bake at 250 degrees for 1 hour, stirring every 15 minutes.
  10. Spread on waxed paper to cool, breaking apart large clumps as mixture cools.
  11. Store in airtight container.
