Happy Birthdays & Coconut Custard Cake

Today is my youngest son’s birthday – Happy Birthday, Sweetheart! Who would have ever believed that this tiny, precious little boy would grow up to be such an intensely competitive soccer-playing law student!


It is also the birthday of my sweet friend, Sara. Hope it’s a great one, Sara!

It’s Monday, the US Open Tennis Tournament starts today (have fun, Donna!) & so the week begins!

Coconut Custard Cake

Just for #3 Son, a dairy-free cake. Also gluten-free, in case you’re interested.


  • 8 Eggs
  • 4 cups Coconut Milk
  • 1 cup Coconut Flour
  • 1 cup Natural Sugar (Rapadura or Sucanat)
  • 1/2 cup melted Coconut Oil
  • 2 teaspoons Baking Powder
  • 3 cups Coconut Flakes
  • Cinnamon & Nutmeg


  1. Pre-heat oven to 350 degrees.
  2. With a hand-held blender mix eggs, milk, coconut flour, sugar, oil, baking powder till smooth.
  3. Stir in coconut flakes.
  4. Pour into a 9×13 pan & sprinkle cinnamon and nutmeg over the top.
  5. Bake for 1 hour or till top & bottom are light golden brown.
