It’s Labor Day Weekend, the official end to the summer season! Kick back, relax for a few days. Christmas is just around the corner!
I’m taking a long weekend, so I’ll see you next week!

White Bean Dip

Yes, I know, this Post published last Wednesday by accident, but I didn’t have the recipe up then. Enjoy this adaptation from a recipe on Epicurious.com!

Ingredients:

  • 15-ounce can Cannellini (white kidney beans), drained
  • 1 1/2 Tablespoons Fresh Lemon Juice
  • 1 1/2 Tablespoons extra-virgin Olive Oil
  • 2 Garlic Cloves, peeled
  • 3/4 teaspoon ground Cumin
  • 1 Tablespoon chopped Fresh Spearmint
  • 1 Tablespoon chopped fresh Dill
  • 1 teaspoon grated Lemon Peel

Instructions:

  1. Puree first 5 ingredients in processor until almost smooth.
  2. Season with salt and pepper.
  3. Transfer dip to small bowl.
  4. (Can be prepared 1 day ahead. Cover and refrigerate.)

  5. Mix mint, dill & lemon peel in small dish; sprinkle over dip.

Serve with pita toasts & fresh veggies.
