Puppy Dreams & Wild Rice Salad

Millie, Lucy’s best friend, next-door neighbor doggy, is laying at my feet having puppy dreams, which ain’t easy for an old dog. Lu & Mil are 11 years old this year.

It always tickles me to see dogs resting quietly when all of a sudden the dreams take over: muted barking, running paws & my stifled laughs.

Wild Rice Salad

Ingredients:

  • 3 cups Chicken Broth or Water
  • 1 cup Long Grain Rice (I use Basmati rice, rinsed)
  • 1 cup Wild Rice Blend (I use H.T. Traders Wild Rice Blend from Harris Teeter)
  • 1/2 teaspoon Sea Salt
  • 2 Tablespoons Olive Oil
  • 1/4 cup Red Wine Vinegar
  • 2 Tablespoons Toasted Sesame Oil
  • 4 stalks Celery, sliced & coarsely chopped
  • 8 ounces Frozen Peas & Carrots, thawed but NOT cooked
  • 1/2 cup Pecans, toasted
  • 3/4 cup Dried Cranberries
  • 3/4 cup Dried Apricots, chopped
  • Sea Salt & Black Pepper
  • 1 small bunch Green Onions, both green & white parts sliced

Instructions:

  1. Pour chicken broth in a medium sized saucepan.
  2. Add rice, wild rice & Sea Salt.
  3. Bring to a boil, reduce heat to low, cover.
  4. Cook 20 minutes.
  5. Remove from heat; Cool completely.
  6. Whisk together olive oil, red wine vinegar & sesame oil.
  7. In a large bowl gently mix together cooled cooked rice, dressing & remaining ingredients except green onions, adding salt & pepper to taste.
  8. Chill completely.
  9. Stir in green onions just before serving.
