Natchez Trace & 8 Vegetable Juice

We live near the northern terminus of the Natchez Trace Parkway. When I was 15 & had just gotten my learners permit, my Dad let me drive part of the family vacation on the Trace. Restricted traffic, lower speed limit – 50 mph & a chance to gain some over-the-road-driving experience.

What Is The Natchez Trace Parkway?

The Natchez Trace Parkway is a 444-mile drive through exceptional scenery and 10,000 years of North American history. Used by American Indians, “Kaintucks”, settlers, and future presidents, the Old Trace played an important role in American history. Today, visitors can enjoy not only a scenic drive but also hiking, biking, horseback riding, and camping.

Road construction was begun in the 1930’s with the final segments completed in 2005. 75 years to build a road…must be a government contract.

Homemade 8 Vegetable Juice

Break out the juicer…

Ingredients:

  • 8 Carrots, cut into chunks
  • 4 stalks Celery, cut into chunks
  • 6 Tomatoes, cut into chunks
  • 1 bunch fresh Spinach
  • Handful of Parsley
  • 1/2 White Onion
  • 1 fresh, raw Beet, cut into chunks
  • 2 cloves fresh Garlic

Instructions:

  1. Run all ingredients through your juicer.
  2. Stir, chill, stir & serve.
