Traveling Again & Loaded Molasses Oatmeal Cookies

Mute Monday is suspended today.

DH had so many days of vacation left over from last year, he has tried to take time off every month. He decided to take a week off this month because the weather would be cooler no matter where we went & he would get the break he needed from the stress at the office.


Since he had a free ticket of SouthWest Airlines, we decided to go to Colorado. He has been to Denver for business, but I have never visited this state. There are so many things I want to see, I have had to repeat over & over that this is not the only time I will visit, I will be back, so to pare down the sites & activities to a reasonable, workable list.


When this Post publishes, we will be in the airport – he going through the naked body scanner, me opting out choosing instead an intrusive TSA pat-down – on our way out west. Let’s see if I can Post every afternoon this week instead of working ahead.

Oatmeal Cookies

Loaded Molasses Oatmeal Cookies

Sometimes you just need a good cookie.


  • 1/2 cup Unsalted Butter
  • 2 eggs
  • 1/2 cup Molasses
  • 1 1/2 cup Oatmeal
  • 1 ½ cup Ground Oatmeal (throw it in the blender for a minute or so)
  • 1/2 teaspoon Sea Salt
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon aluminum-free Baking Powder
  • 1/2 cup finely chopped Raisins
  • 1/2 cups chopped Pecans
  • 1 cup Dark Chocolate Chips, chopped
  • 1/2 of a 6 ounce package Almond Brickle Bits (Heath Bits of Brickle)
  • 3 ounces dried Apple Slices, coarsely chopped


  1. Whip butter until smooth.
  2. Add eggs & molasses.
  3. Stir in oatmeals with salt, soda & baking powder.
  4. Mix well.
  5. Stir in everything else.
  6. Drop onto buttered or Silpat-lined cookie sheet.
  7. Bake at 350 degrees for 12 minutes or so.
