November 10, 2011

I finally saw the buck! The probable father of the twin deer that have enjoyed our green grass all summer.

He & another doe were visiting our backyard early in the morning before Lucy was out disturbing the world with her barking.

Unfortunately I did not have my camera with me – hey, it was early in the morning! So instead, you get more pretty tree photos & whatever the beautiful red berries are – besides being excellent deer fodder!

Apple Pie Oatmeal

An autumn update of the old classic, great when you have folks in for the holidays.
Serves 4

  • 1 3/4 cups Water
  • 1 cup Apple Juice
  • 1/2 teaspoon Cinnamon
  • 1 1/2 cups Old-fashioned Oats
  • 1 chopped McIntosh Apple
  • 1/4 cup Honey
  • 1/2 teaspoon Vanilla

  1. Bring water, apple juice & cinnamon to a boil in a medium saucepan.
  2. Stir in the apples & cook to soften for 1 minute.
  3. Stir in the oats, honey & vanilla.
  4. Reduce heat to a simmer & cook until thick – stirring often. Check after 4 minutes for desired texture.
  5. Top with butter or whipped cream, if desired.
