Funny Friday & Breakfast Cookies

Hey – it’s 11/11/11 – that’s funny & not going to happen again for… a very long time!

Breakfast Cookies

So much of food enjoyment has to do with the sense of smell. Have these baking in the kitchen & the kids will jump out of bed in the morning.

Ingredients:

  • 1 cup Unsalted Butter, melted
  • 3/4 cup Honey
  • 2 Eggs
  • 1 teaspoon Sea Salt
  • 1 teaspoon Cinnamon
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • 1/2 cup Buttermilk, plain Yogurt or Coconut Milk with 1 teaspoon White Vinegar
  • 2 cups Whole Wheat Flour
  • 2 cups Old Fashioned Rolled Oats
  • 1 Carrot, grated
  • 1 Zucchini, grated
  • 1 cup Raisins
  • 1 cup Dark Chocolate Chips

Instructions:

  1. Pre-heat oven to 350 degrees.
  2. Mix butter, honey, eggs, salt, cinnamon, soda, vanilla & buttermilk.
  3. Stir in flour & oats.
  4. Fold in carrot, zucchini, raisins & chocolate chips.
  5. Scoop heaping Tablespoons of dough onto a cookie sheet.
  6. Bake for 15-ish+ minutes.
  7. Allow cookies to cool 3-4 minutes on cookie sheet before removing cookies to cool on a wire rack.

Bar Cookies

I know – mornings are insane & you’re trying to get yourself dressed to get out the door.

  • Follow the same recipe as above, only spread the dough into a buttered 9×13 inch pan.
  • Bake in a 350° oven for 25 minutes.
  • But my favorite “cheat” is to mix the dough up the night before.
