Facebook & Moist Baked Chicken

Facebook has become ubiquitous it seems. Everyone is signing on. Folks are reconnecting with long, lost friends & staying connected even when far away from family. That’s good.


What’s not so good – news articles of late have reported that Facebook is tracking your every movement online, even when you are signed out & logged off from FB. I find that creepy & intrusive.

Moist Baked Chicken Breasts

How about some baked chicken that can be kept warm without becoming dry when dinner has to be delayed.


  • 1/4 cup Olive Oil
  • 1 Tablespoon Honey
  • 1 Tablespoon fresh Lime Juice
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Paprika
  • 1/4 teaspoon Black Pepper
  • 4 Chicken Breast Halves, washed & patted dry


  1. Preheat oven to 400 degrees.
  2. In a small bowl, combine olive oil, honey, lime juice, salt, paprika & pepper.
  3. Place chicken in single layer, skin side up, in a glass baking dish.
  4. Apply oil mixture to chicken pieces.
  5. Bake in oven for 35-40 minutes, basting every 8-10 minutes, until well browned & juices run clear when you cut into the thickest part of the chicken.
  6. Remove from oven.
  7. Cover baking dish with foil for 15 minutes. (This softens the chicken & keeps it hot until ready to serve.)
