D is for Decorations in the yard, on the front door, in the living room, dining room, every room. Christmas is a celebration like no other when we beribbon & bedeck everything in sight with red & gold & green & silver.

Shrimp Creole

This is a change of pace from the usual boiled shrimp. The creamy, pepper-laden tomato sauce is delicious & can be made ahead then frozen for when you are too busy to cook. Just thaw the sauce & start at instruction Number 5.


  • 1/4 cup Green Bell Pepper, chopped
  • 1/4 cup Red Bell Pepper, chopped
  • 1 Jalapeño Pepper, chopped
  • 2 Scallions, both white & green parts, chopped
  • 1/4 cup unsalted Butter or Coconut Oil
  • 1/4 cup Arrowroot, Coconut Flour or All-Purpose Flour
  • 1/2 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper
  • 15-ounce can Fire-Roasted Tomatoes
  • 15-ounce can Tomato Sauce
  • 2 pounds raw Shrimp, 21-25 per-pound size
  • 10 ounce box frozen Green Peas


  1. Pre-heat oven to 450 degrees.
  2. In a large iron skillet, sauté peppers & scallions in butter.
  3. Stir in arrowroot, seasonings, tomatoes & sauce.
  4. Bring to boil & stir until thickens.
  5. Spread shrimp around the skillet over the sauce.
  6. Sprinkle peas evenly over the top of all.
  7. Place in the oven for 20 minutes.
  8. Remove from oven & stir to cover shrimp & peas with sauce.
  9. Serve over rice, an omelet or scrambled eggs.
