Some believe that the ancient Roman tradition of decorative wreaths as a sign of victory started this habit.

The tradition of using evergreen branches as a material in wreaths is influenced by the Egyptian, Chinese and Hebrew cultures who believed that evergreen branches are a symbol of eternal life. After the birth of Jesus Christ, the Advent wreath became a popular Christmas tradition. With the passage of time, the custom of Christmas wreath became an important tradition widely followed by people from different parts of the world.

Asparagus

Hot Bacon Asparagus Salad

I know, I know, asparagus is not officially in season where I live. But this is Christmastime & a little splurging on special foods is acceptable.

Ingredients:

  • 7 Bacon Strips, diced
  • 1 pound Asparagus, trimmed, cut into 1 1/2-inch pieces
  • 1/3 cup Red Wine, Apple Cider or White Wine Vinegar – you choose the flavor
  • 1 Tablespoon Honey
  • 1/2 teaspoon Ground Mustard
  • 1/4 teaspoon Pepper
  • 4 cups torn Salad Greens
  • 1/2 cup sliced Almonds
  • 2 sliced Boiled Eggs

Instructions:

  1. In iron skillet, cook bacon until crisp; Remove with a slotted spoon to paper towel.
  2. Drain, reserving 2 -3 Tablespoons drippings.
  3. Sauté asparagus in drippings until crisp-tender.
  4. Add vinegar, honey, mustard, pepper, bacon.
  5. Cook, stirring for 1 – 2 minutes.
  6. In a large bowl, combine the salad greens with the almonds.
  7. Add the asparagus mixture & toss gently.
  8. Top with eggs.
  9. Serve immediately.
