It’s Spring! & Asparagus Wrapped in Ham

It’s Spring! That glorious time of year when the sun stays up longer, the weather warms, the plants awaken from their winter sleep.

Though we had an extremely mild winter, the light & warmth of spring is so welcome.

The yard looks awful – scattered small limbs that have fallen in recent rain storms; grass not yet growing, so bare dirt or mud. there is so much work to do it could be disheartening, but it’s not! Now I have a legitimate excuse for not doing housework! Woo Hoo! Stay all day in the yard, in the sunshine working! I love it!

Asparagus Wrapped in Ham

This is the easiest appetizer to prepare & with both asparagus & ham plentiful this time of year, it’s a natural. Be sure to use ham slices that are nitrate/nitrite-free!


  • 1 pound fresh Asparagus, blanched
  • 1 package Ham Slices, cut into halves, thirds or quarters depending on size
  • Dipping Sauce, Honey Mustard Dressing or Herb Vinaigrette

Blanched Asparagus for Appetizers

  1. Trim woody stem off end of asparagus.
  2. Steam or blanch in boiling water for 2 – 3 minutes.
  3. Plunge immediately into ice water to stop cooking.
  4. Dry & chill.
  5. Wrap in ham then place on hors d’oeuvres tray with dipping sauces on the side.

Note: You can spread a bit of Boursin Herb cheese on the ham to hold the asparagus in place or not. Either way it’s delicious.
