Wednesday of Holy Week is known as Spy Wednesday to commemorate when Judas led the chief priests, scribes & elders to the garden of Gethsemane where Jesus was seized. Jesus the Christ had spent the evening in prayer to the Father while His disciples slept.
Ever done that – fallen asleep while praying? Forgotten to pray when a friend shared a need? Given up asking when a prayer isn’t answered immediately, the way you want it answered?
God isn’t our errand boy who jumps at our every command. He isn’t subject to our whims, wants, flights of fancy. He never slumbers, nor sleeps. The Lord God Almighty is Faithful, never forgetting for a moment that our frame is dust. He knows us better than we know ourselves & He knows what we need. Need not want. What we need.
Jesus concluded His prayer that Wednesday night asking that the Father’s will be done. Another example He left us that we would do well to follow.
Basic Matzo Ball Soup
I remember the first time I ate Matzo Ball Soup: I was 7 years old & a sweet friend, Mrs. Epstein, shared a pot during Passover. I have eaten it ever since.
- 4 Egg Yolks
- 1 teaspoon Sea Salt
- Dash of Pepper
- 2 Tablespoon grated Onion
- 2 Tablespoons minced fresh Parsley
- 2 Tablespoon melted Chicken Fat (unsalted butter can be substituted)
- 4 Egg Whites, stiffly beaten
- 3/4 cup Matzo Meal
- 3 quarts organic Chicken Stock/Broth
- Beat together egg yolks, salt, pepper, onion, parsley & fat until creamy; fold into the egg whites.
- Gradually fold the matzo meal into egg mixture.
- Chill 1 hour.
- Moisten hands & shape into 1/2-inch balls. (Makes about 24)
- Bring chicken broth to boil in a large, covered saucepan.
- Reduce heat to simmer; add balls to broth.
- Serve soup as the balls rise to the top of the broth, about 30 minutes.
