7 Days Till Christmas: Santies

Luke 2: 4 – 7
Joseph also went up from Galilee, from the city of Nazareth, to Judea, to the city of David which is called Bethlehem, because he was of the house and family of David, in order to register along with Mary, who was engaged to him, and was with child.
While they were there, the days were completed for her to give birth.
And she gave birth to her firstborn son; and she wrapped Him in swaddling cloths, and laid Him in a manger, because there was no room for them in the inn.

I called these Sand Cookies at first. The boys called them Sandy Cookies. My youngest started calling them Santie’s (Santa’s) Cookies when I made them at Christmas-time & it stuck.


  • 1/2 cup unsalted Butter, melted
  • 1 cup Sugar
  • 1/2 cup Coconut Oil, melted
  • 1 Egg
  • 1/2 teaspoon each of Sea Salt & Baking Soda
  • 1 teaspoon Vanilla
  • 2 1/2 cup all-purpose Flour
  • Cinnamon Sugar Mix &/or Colored Sugar


  1. Pre-heat oven to 325 degrees.
  2. Mix together ingredients in order listed.
  3. Drop with a teaspoon (the kind with which you eat cereal) onto cookie sheet sprayed with non-stick spray.
  4. Sprinkle with colored sugar or cinnamon & sugar.
  5. Bake at 325 degrees for 10 minutes, slightly browned.
  6. Cool on rack.
