Harvest & Replanting & A Recipe!
Carole shared her tomatoes. The Foster garden was much larger than mine so they had many more tomatoes, lots of cucumbers, tons of peas & too many ears of corn. DH & I & friends are the beneficiaries!
Raspberries have begun to ripen.
Peas, okra, peppers & a few tomatoes are still making.
I have canned over 4 dozen pints & a dozen quarts of my salsa, lots of tomatoes, thanks to Carole. We have quarts of lacto-fermented cucumber pickles in the refrigerator. Purple hull peas are in the freezer awaiting the holidays when the boys will be home. Okra we are enjoying when there is a mess to fry.
I have planted some veggies for autumn: broccoli, cauliflower, pumpkins, chard, turnips. It is tempting to pull the tomatoes so I can get spinach & lettuces started! Next year the summer garden will be larger & outside my fence. DH is taking ownership of the tomatoes, though I will be the one canning salsa.

Marinated Tomato, Cucumber & Onion Salad
Adapted from Food.com; adapted from Beaverdam Creek Farm
- 3 medium Cucumbers, sliced 1/4” thick
1 medium Sweet Onion, sliced & separated into rings
1 cup Cocktail Tomatoes, cut in half
1/2 cup raw Apple Cider Vinegar
2 Tablespoons raw Honey
3/4 cup Water
2 teaspoons Sea Salt
1 teaspoon Black Pepper
1/4 cup olive oil
1 teaspoon Spearmint, chopped optional
- Combine all ingredients in large bowl.
Chill 2 hours before serving.
